2025 has been a phenomenal year at Wicklow Wolf. The brewers have been working hard and produced 23 exceptional new beers, collaborations and limited editions that really struck home with our community. From community based initiatives like raising money for the local ‘Friends of the Cliff Walk’ volunteers through “Cliff Walk” to producing some exceptional collaboration beers with Brennans Bread, Butlers Chocolate and Glendalough Distillery to name but a few. It was a busy year again on the hop farm and we are delighted with the work that went into Locavore Hop Harvest in order to bring another successful hop harvest and one that shines through in this year’s ESB. 23 beers, which one was your favourite?

Wicklow Wolf 0.5 Mango

Style: Mango Non-Alcoholic IPA

With WICKLOW WOLF 0.5 MANGO, we have taken all the things we love about our Wicklow Wolf 0.5 Non-Alcoholic IPA and given it a burst of Mango. Brewed without compromise, using speciality malts, tropical fruit forward hops and mango juice, this is crafted to make it high in flavour but low in alcohol.

Wicklow Wolf 0.5 Pineapple

Style: Pineapple Non-Alcoholic IPA

With WICKLOW WOLF 0.5 PINEAPPLE, we have taken all the things we love about our Wicklow Wolf 0.5 Non-Alcoholic IPA and given it a burst of Pineapple. Brewed without compromise, using speciality malts, tropical fruit forward hops and Pineapple juice, this is crafted to make it high in flavour but low in alcohol.

Hideaway Helles

Style: Helles Lager

HIDEAWAY Helles Lager is your ticket to a moment of calm and clarity. Crisp and clean, this refreshing lager offers delicate floral notes, complemented by a smooth, biscuity malt base. Hideaway is the perfect companion to transport you to your sacred space – your hideaway. Escape the noise, savour the simplicity, and let this clean, balanced lager be your moment of zen.

Next Stop

Style: West Coast IPA with Amarillo, Simcoe, Citra & Columbus

Next Stop is inspired by the journey of Captain Wolf aboard HM Coastguard, navigating the rugged West Coast of Ireland in search of a site for Ireland’s most westerly lighthouse. His voyage led him to Foze Rock, a remote and unforgiving Atlantic outcrop and the most Westerly point of Ireland. Though deemed unsuitable, the mission continued, and the lighthouse found its home on Tearaght Island. After Foze Rock, the next stop? Newfoundland, Canada.

Like the vast ocean that separates these lands, Next Stop is bold, untamed, and full of character. Brewed with Amarillo, Simcoe, Citra, and Columbus hops, this 5.8% West Coast IPA delivers waves of zesty citrus, resinous pine, and dank aromatics, balanced by a touch of stone fruit and floral spice. A Pilsner and Vienna malt backbone provides a crisp yet subtly sweet foundation, while a firm, lingering bitterness gives way to a dry, refreshing finish – just like the bracing Atlantic air that inspired it.

Pacific Heights

Style: California Common

A beer inspired by Quincey’s time living in San Francisco. Living in Pacific Heights, it was there that he began homebrewing and discovered the world of craft beer. If you sit down for a pint with Quincey, it won’t be long before he slips into storytelling mode, sharing tales of his runs around San Francisco, across the Golden Gate Bridge, and treating himself to a pint of Anchor Steam afterwards. A beer that was – and still is – synonymous with San Francisco is Anchor Steam, a California Common style that inspired this recipe.

Pacific Heights is a California Common pours a deep amber that was lagered and brewed using lager yeast. You can expect a bold yet balanced profile, with earthy and resinous notes and a touch of spice and floral complexity. A strong malt backbone provides subtle caramel sweetness, while the crisp finish leaves you ready for another sip.

Cliff Walk

Style: Hazy IPA with Krush, Idaho 7 & Citra

Brewed with Yakima Chief’s Citra and their latest innovative new hop, Krush, Cliff Walk bursts with bright citrus and tropical fruit aromas. It delivers juicy notes of ripe peach, passionfruit, and zesty lime. A soft, pillowy mouthfeel and balanced bitterness make this 5.0% Hazy IPA an easy-drinking, refreshing experience.

Inspired by the breathtaking Bray to Greystones Cliff Walk, this Hazy IPA celebrates our local Wicklow landscape. Closed since 2021 due to erosion, the Cliff Walk is being restored by the dedicated volunteers of Friends of the Cliff Walk as they work tirelessly to maintain the trail and find solutions for its reopening. A portion of proceeds from every can supports Friends of the Cliff Walk, helping to restore this cherished path for all.

Sit back, close your eyes, and sip on this Hazy IPA – let it transport you to the Cliff Walk. Feel the sea breeze rolling in off the Irish Sea, hear the DART weaving through the cliffs, and soak in one of those rare, long-awaited sunny Irish days.

 

Off Script

Style: West Coast Pils

Off Script is a break from tradition, a beer that celebrates doing things a little bit differently. We love trying new things and experimenting with different beer styles and this is a beer inspired by how the team at Highland Park Brewery in LA broke tradition and made a 50/50 blend of their West Coast IPA and their Pilsner for a festival. The brewer’s took a chance, went off script and the result was a resounding success. This latest Endangered Species has gone off script, from style to label design – things have been done a little different.

Crisp, bold, and unapologetically different, Off Script blends two worlds – hoppy West Coast IPA and crisp German-inspired Pilsner. A bright, refreshing Pilsner backbone sets the stage, while citrus, stone fruit, and resinous hop character shine through. Citra brings bursts of grapefruit and lime zest, while Tango and Audacia add juicy peach, white grape, and a hint of floral spice. A clean bitterness and crisp finish make this as drinkable as it is daring.

Bittersweet

Style: Limoncello Sour

Bittersweet, Endangered Species No. 58, is a zesty Limoncello Sour inspired by the Italian classic, capturing a perfect symphony of bitter and sweet. Bursting with fresh lemon zest and juice, it delivers a bright citrus aroma followed by a lively sour tang, softened by a subtle, natural sweetness – true to its name.

The spritzy body enhances its refreshing character, leading to a crisp, mouthwatering finish that leaves you wanting more. At 3.8% ABV, it’s light, zesty, and undeniably moreish – like summer in a glass. Just as Limoncello is crafted with patience, this kettle-soured brew infuses real lemon zest and juice, ensuring a refreshingly, lip-smacking sip every time. Cin cin!

Batch Brew

Style: Pale Ale Brewed with Brennans Batch White Loaf

At Wicklow Wolf, we believe that great beer can do great things. That’s why we’ve teamed up with our friends at Brennans Bread once again to create something special – Batch Brew. A light, fruit-forward Pale Ale brewed with Brennans Batch White Loaf, helping to reduce food waste one sip at a time. Brewed sustainably and with the planet in mind, we are committed to planting one native Irish tree for every twelve cans sold, continuing our mission to give back to nature. Expect bright citrus notes, a crisp finish, and a subtle bready backbone – a brew that’s good for the planet and great in the glass. Enjoy – and please drink responsibly!

Dire Wolf

Style: Hazy DIPA with Galaxy, Enigma & Eclipse

Endangered Species No. 59 is something straight out of science fiction – inspired by what can only be described as a real-world Jurassic Park moment. The once-extinct Dire Wolf has been brought back from the brink by genetic engineering lab Colossal, reborn through cutting-edge innovation and boundary-pushing science.

As a nod to the return of this apex predator, we’ve brewed a beer that’s just as big, bold, and fierce. Dire Wolf is a beast of an 8.0% Hazy Double IPA, brewed with an all-Australian hop bill featuring super-fresh Galaxy, Enigma, and Eclipse hops.

It howls with tropical aroma and flavour – delivering waves of passionfruit, juicy peach, ripe pineapple, and zesty citrus, all wrapped in a soft, hazy body. Bold, feral, and unapologetically primal, Dire Wolf is our tribute to something wild reborn.

Suddenly Acai

Style: Acai, Blueberry & Strawberry Sour

A vibrant, fruit-forward pastry sour brewed with açaí, blueberry, and strawberry. Inspired by Ireland’s latest love for açai bowls and named after KT Tunstall’s jam ‘Suddenly I see’, a song that we can’t get out of our heads in the brewery now.

Bright, jammy, and refreshing, Suddenly Açaí is a 5.0% sour that delivers a delicious berry punch with every sip.

Honey I Shrunk The Pils

Style: Honey Pilsner

Endangered Species No. 61 sees us team up once again with our friends at @openhivehoney for a beer that celebrates and champions local Wicklow honey.

Honey, I Shrunk the Pils is a crisp, clean, and floral pilsner brewed with a twist. Crafted with classic pilsner malt for a smooth, balanced body, this lager is infused with Spring Blossom Honey sourced directly from our very own hives, managed by OpenHive. The honey brings a gentle floral lift and soft sweetness that complements the beer’s delicate malt character. Refreshing and full of character, this is a pilsner that’s easy-drinking but far from ordinary.

Born 2 B Wild

Style: XPA with Amarillo, Elani and Centennial

Wicklow Wolf and Crosby Hops, two proudly certified B Corporations, have joined forces to create a beer that’s more than just a great drink – it’s a celebration of shared values and a commitment to doing good.

This collaboration brings together the wild Wicklow spirit and Oregon hop expertise in a refreshing XPA, brewed with Amarillo® CGX™, Elani™ and Centennial hops, offering bright citrus and stone fruit notes with a crisp, clean finish. With every can sold, funds will be raised for ReWild Wicklow, supporting vital efforts to restore and protect the natural beauty of Wicklow’s wild spaces.

Mór Bier

Style: Traditional Bock

Mór Bier is a beer born from friendship, and a love of tradition, flavour and fermentation. A collaboration between Wicklow Wolf and Gubbeen Farmhouse, this 6.0% Traditional Bock is a nod to tradition and taste – the key values behind Gubbeen. Taking its name from the classic French cheese, Morbier, known for its iconic ash line, the name also tips its hat to the Irish – mór meaning “big” – and, naturally, the call for “more beer”.

Brewed in the style of a classic German Bock, Mór Bier showcases the time-honoured techniques of traditional lager brewing. It pours a rich amber with aromas of dark bread, caramel, and subtle dried fruit. On the palate, it’s smooth and malt-forward, with layers of toffee, biscuit, and a warming finish. Mór Bier is made to be shared – around a table, with friends and accompanying food. Pair it with Gubbeen cheese, cured meats, or just good company. It’s a beer with a story in every sip. As The Crow Flies

Style: Hazy IPA with Krush, Idaho 7 and Galaxy

Wicklow Wolf and Cloudwater have come together to brew a beer that celebrates the short stretch, deep ties between Ireland and Manchester and our close-knit brewing community, bound by shared values of creativity, craft, and connection. Like the crow’s path -direct and purposeful – this beer is brewed with intention: to bring people together, to celebrate friendship, and to raise a glass to the creativity and craft that unite us.

As the Crow Flies is a 6.0% Hazy IPA with Krush, Galaxy and Idaho 7 hops. Expect waves of juicy tropical fruit, peach, and citrus layered with soft notes of bubblegum, banana from the New England strain and hefeweizen unique yeast blend. This unique yeast blend boosts the aroma, complimenting the citrus and stone fruit flavours, giving a smooth, well-rounded mouthfeel.

Pointy Shoes 2025

Style: Bourbon Barrel Aged Imperial Stout

Introducing Endangered Species no. 62, Pointy Shoes 2025. First released in 2019 to mark our 5th Birthday. Pointy Shoes 2025, a Bourbon Barrel Aged Imperial Stout, aged in Bourbon barrels for 12 months, was brewed to celebrate our 11th birthday. Expect smooth bourbon notes of oak, vanilla, complimented with coffee and chocolate from the malt bill.

When we decided to brew a beer to celebrate our birthday – there was always only one name to call it – Pointy Shoes. Back in 2014 when Quincey and Simon made the decision to make their dreams a reality and open Wicklow Wolf they searched for a building that they could move into and call it the home of Wicklow Wolf. A former bakery in the heart of Bray ticked all the right boxes. Simon set up a meeting to meet the landlord to secure the premises.

Uncharacteristically for Simon, he was early to the meeting and the landlord said that if your business partner turns up in ‘Pointy Shoes’ you both can forget it. Luckily, Quincey worked in the big corporate drinks world and on leaving he vowed never to wear a suit again and with them pointy shoes. It was that moment and that phrase that helped shape what the two lads wanted to build – an independent brewery without any hints of ‘pointy shoes’ and what they stand for. 10 years on, still no pointy shoes.

Devil’s Glen

Style: Black IPA

Introducing Endangered Species No. 66 – Devil’s Glen. From deep within the Wicklow woods, the Devil’s Glen waterfall crashes with a roar said to echo the devil’s own voice. We’ve harnessed that dark, satanic energy in this Black IPA.

Pouring jet black with a hit of fire-y hue, the beer opens with aromas of roasted coffee, toasted caramel, and a whisper of dark chocolate. The first sip reveals layers of rich malt sweetness balanced by a clean roast, while waves of citrus zest, ripe tropical fruit, and pine from the Strata, Audacia and Luminosa hops cut through the darkness. Bold, bitter, and unforgiving at 6.66%, this is a beer worthy of the Devil’s Glen legend.

Truffle Shuffle

Style: Milk Chocolate Truffle Stout

At Wicklow Wolf, we believe great beer is born from great collaborations. That’s why we’ve teamed up with our friends at Butlers Chocolate to create something truly indulgent – Truffle Shuffle. A rich, velvety Milk Chocolate Truffle Stout inspired by Butlers’ luxurious handcrafted Milk Chocolate Truffles. Truffle Shuffle is a decadent treat for the senses. Expect layers of smooth milk chocolate, hints of creamy vanilla, and a luscious, silky mouthfeel. A beer brewed to celebrate craft, quality, and best savoured slowly. The Still Hand

Style: Barleywine Aged in Glendalough Distillery Whiskey Aged Oloroso Barrel

Pride in our home and love of our craft are just two values that we at Wicklow Wolf share with our neighbours at Glendalough Distillery. After many conversations about blending brewing and distilling, we created something special — a bold 13.1% Barleywine aged in Glendalough’s ex-Oloroso sherry and whiskey barrels. Named The Still Hand after Glendalough’s stills and St. Kevin’s patient legend, this beer is defined by time. It pours deep mahogany with rich caramel, marmalade, dried fruits, warming sherry sweetness, smooth whiskey character, and toasted oak complexity. Enjoy.

Locavore 2025

Style: Fresh Hop Harvest Extra Special Bitter

At Wicklow Wolf, our mission is to brew exceptional beers in a sustainable way. Beholden to nothing but the seasons and Mother Nature’s will. We have worked tirelessly up on the Hop Farm to ensure this year’s harvest was a success. For the 12th Edition of our Locavore Hop Harvest, we have crafted an Extra Special Bitter. An ESB brewed using the finest local ingredients – Wicklow Water, Yeast from our neighbours WHC Labs. Hops from our 2025 Harvest, and locally sourced barley, malted specially for us by Minch Malt. Locavore is a beer that champions Local Ingredients, Terroir, and Sustainability. We take great pride in our Hop Farm and it is now home to over 5,000 Native Irish Trees, Eight Beehives, and, of course, our hops. Expect floral and earthy tones from the Wicklow Hops with bitter bite, all balanced by a smooth malty sweetness.

Heimirken

Style: Parrott-Dise Lager

Yes, the boys in green did it, it wasn’t a dream.  Yes, this beer is real.  Yes, we actually brewed it.

Introducing Heimirken Parrott-dise Lager, a beer brewed to celebrate those incredible scenes in Hungary – Heimir on the touchline, Troy slotting home the last-minute winner, and a nation leaping off the bar stool all at once.

This 4.42% lager is bright, crisp and tastes like victory.

Still Far Away

Style: New Zealand Hazy IPA with Riwaka, Motueka and Nelson

Introducing Endangered Species No. 63 – Still Far Away. A follow on from our Endangered Species numbers 15 (Somewhere Far Away) and 26 (Far Far Away), Still Far Away is the brain child of our brewers coming together, to produce a beer that champions three super fresh New Zealand hops, Riwaka, Motuka and Nelson Sauvin.

This Hazy IPA is the perfect platform for these hops to shine through. Expect a burst of citrus fruits, lime zest, grape and gooseberry. Tropical, zesty and softly hazy. Sit back, put your feet up and dream of somewhere that is, Still Far Away.

Double Trouble

Style: Affogato – Coffee and Vanilla Imperial Stout

Great beer starts with great friends. In true Never A Day’s Trouble fashion, we first met through a van window while Jack brewed the coffee. Talk of beer, coffee and cars followed – we became their first wholesale customer, and the idea for Double Trouble was born.

Inspired by the Italian dessert – affogato, this 10% Imperial Stout is brewed with their Fazenda Lagoa Brazilian coffee, layered with vanilla, with a touch of lactose to bring the dessert to life. Think creamy vanilla ice cream under a fresh shot of rich espresso, all captured in a can. Great beer, great coffee really does mean good times. Enjoy – please drink responsibly!
