The Locavore Project epitomises the core philosophy that Wicklow Wolf was founded upon, provenance and pride. This allows us to celebrate the terroir of Wicklow, our home and champion it with small batch, local, experimental beers.
Locavore will see four new beer releases per year – Spring, Summer, Autumn and Winter. These will allow us to experiment with small batches, new ingredients, mixed fermentation and push the boundaries of our innovation to brew something special to reflect and champion our home, Wicklow.

Locavore Winter 2023
For our 10th edition of Locavore Winter, we have brewed a Dry Irish Stout sourcing the finest Irish ingredients – Wicklow Mountain water, Hops from the 2023 harvest on our hop farm and hop garden at the brewery and our own Malted Barley that we grew in the field behind the brewery. Locavore is a beer that champions local ingredients, terroir and sustainability.
Sourcing ingredients here in Wicklow is something that we are extremely proud of, which allows us to taste the fruits of the Wicklow landscape. Expect a full flavoured stout that is packed with roast malt flavours and floral hop bitterness. This dark, roasty stout finishes with a clean, smooth, dryness that will leave you wanting more.
Locavore Autumn 2023
Locavore Autumn 2023 is a beer that champions Wicklow terroir. A Barrel Aged Irish Barleywine aged in ex bourbon, Fercullen 21 year old Single Malt Whiskey Barrels for 12 months and brewed using our own barley. A complex, full bodied, uncompromising barleywine which pours a viscous mahogany. On the palate it is full of toffee, rich caramel, red wine, dried fruits, marmalade and Christmas cake. All of this is rounded off with the dry tannic finish of a dessert wine, making this decadent beer incredibly moreish.
Locavore Summer 2023

Locavore Summer 2023 is a Raspberry Sour brewed with local Wicklow raspberries grown by the Conroy family in Rocky Valley, Kilmacanogue. Grown just 13km from the brewery, these raspberries provide the beer with beautiful fruity and tart flavours. The beer was also brewed using our very own grown malted barley and wheat, grown at the brewery.
Expect Locavore Summer 2023 to be jam packed with tart raspberry aroma and flavours, with a lip smacking finish that will leave you wanting more. Enjoy!
